MACON, Ga. — Just in time for the holidays, we at 13WMAZ wanted to share some of our favorite Holiday recipes with you!
For this episode, chef Lenee Radkey prepared a maple roasted fall vegetable salad, just in time for Thanksgiving.
Radkey has been a chef for 7 years and is a graduate of Helms College in Macon, where she works now as a culinary instructor.
Radkey says this dish is important because it is a great way for you to get some good veggies in your diet while also making a delicious tasting dish that everyone will enjoy.
To begin this dish you will need plenty of olive oil and roasted veggies, so make sure you have a large flat baking pan and a little patience.
The vinaigrette for the salad comes together pretty quick though, and tastes absolutely delicious.
To finish up, you top the salad with some extra flair - some dried cranberries, chopped almonds, and a sprinkle of goat cheese or feta cheese.
If you want to switch out any of these toppings you can, like adding roasted walnuts or cashews instead of almonds, golden or regular raisins instead of cranberries, or bleu cheese instead of feta/goat cheese.
You can also exclude any of these toppings to your liking.
