Food Truck Fridays begin in Warner Robins

It was Food Truck Friday in Warner Robins at the Museum of Aviation. It kicked off Friday morning at 10:00 until 1:30 pm. Four food trucks were on hand, and Claire Davis spent the day with one food truck owner to learn how the food on wheels business works.

The love of food is deeply embedded in Jada Smith's roots. “For me, I think some of my favorites are the most simple stuff. You know, just an evening meal that she world make are probably my favorites,” she said. “And she makes a fantastic red velvet cake,” said Smith.

Smith grew up cooking in her mother's kitchen in Warner Robins. Years later, she bought a food truck with her husband, calling it Sofrito. It's named after a sauce used as a base in Latin American cooking. “We really wanted to share that with the community, so we put our two cultures together so we put southern and South American fusion in our truck,” said Smith.

Whether it's chopping up cabbage or getting the fryer sizzling, Smith says there's something for everyone. “We do different types of empanadas, we have a traditional chicken, but then we do some that are a little different like a bacon cheeseburger, and we do pepperoni pizza, so you've got a little bit of southern a little bit of south American,” said Smith.

The food truck's space is nothing like the kitchen she learned to cook in. “Two feet long by seven feet wide. Super small and super-hot,” said Smith.

But Smith says a restaurant wasn't at all what she had in mind 2 years ago when she decided to take on this new venture. “This was a great way to kind of get our feet wet and decide with our love for food is this really the long-term route we want to take. Maybe one day a restaurant but right now we're really enjoying having a food truck,” said Smith.

So, for now, Smith will keep her love of cooking on the road and sharing it with as many people as she can. Food trucks are in the parking lot of the Museum of Aviation every Friday throughout the month of July. Museum of Aviation officials say they hope to continue the tradition into the fall.
